Triple-Chocolate and Cherry Brownies

Ingredients
2 sticks unsalted butter
1 1/2 cups (8 oz) semisweet chocolate, chopped
1/2 cup cocoa powder
6 eggs
2 cups granulated sugar
1 tsp vanilla extract
1/2 tsp salt
2 cups all purpose flour
1 tsp baking powder
2 cups frozen cherries, thawed and halved
1 cup dark chocolate, chopped
1/3 cup cherry preserves
Directions
  1. Preheat oven to 325° F. Spray a 9 x 13 pan with nonstick spray. Line the bottom with parchment paper. In a double-boiler, add the butter, semisweet chocolate and cocoa powder. Melt, and stir together. Remove the chocolate to let cool slightly. Place the eggs, sugar, vanilla and salt in a mixing bowl. Use an electric mixer to blend until smooth. Slowly pour in the chocolate mixture. Stir until completely combined.
  2. Using a spatula, fold in the flour and baking powder. When combined, fold in the halved cherries and dark chocolate chunks. Pour the batter into prepared pan. Add cherry preserves in spoonfuls across the top of the brownies. Use a spatula to swirl the preserves into the batter. Bake for 1 hour to 1 hour 10 minutes or until a toothpick inserted into the center comes out clean. Let cool before cutting into squares.
